Achieving integral health is a challenge that necessitates an approach from different disciplines to achieve a coordinated impact on people’s health, of which food and nutrition is an integral part. This new book explores some important advances in the role of nutrition in integral health and quality of life, making special emphasis on the challenges that humans face in the era of sedentary lifestyle diseases associated with food consumption, stress from pandemics, and social, economic, environmental, and cultural crises. Jesús Alberto García-García, PhD, is a full-time Professor at the School of Education and Humanities at Autonomous University of Coahuila, Mexico. He has worked on the issue of quality of life, healthy lifestyles, overweight and obesity, physical activity, and school performance in children, adolescents, and adults. Dr. García-García has published eight papers in indexed journals, four book chapters, and two Mexican book, and has made various contributions at scientific meetings. He is a member of the National Researchers System since 2018 (candidate for national researcher) and a member of the National Association of Schools and Faculties of Education and Pedagogy. Dr. García-García teaches courses on statistical introduction, statistics applied to education, inferential statistics, advanced statistics and expectations, and demands of education. He is graduate of science in education (2011) from the Autonomus University of Coahuila; he holds an MSc and PhD in Science of Education from the Autonomous University of Coahuila.

Julio Cufarfán-López, PhD, is a Research Professor, Faculty of Science, Education and Humanities, Autonomous University of Coahuila, Mexico, where he is also General Secretary of the Coordination of Saltillo Unit. He was a Postgraduate Coordinator from 2010 to 2016 and Administrative Secretary from 2016 to 2019 at the same institution. His research work is on quality of life as an socio-educational problem. He has written four books: Studies of the Quality of Life as a Socioeducational Problem; Qualitative and Quantitative Approximations; Empirical Reviews of Human Development, Volumes 1 and 2; and Static, Pathetic and Theoretical, Poematic. He has written articles of national and international dissemination. He is also a speaker and congressman. He has made research stays at the Autonomous University of Yucatan, Mexico, and the Agrarian University of Habana, Cuba. Dr. Cufarfán-López holds a graduate degree in the science in education along with MSc and PhD.

Cristóbal Noé Aguilar, PhD, is Director of Research and Postgraduate Programs at the Universidad Autonoma de Coahuila, Mexico.. Dr. Aguilar has published more than 530 papers in indexed journals, and 550 contributions in scientific meetings. He has also edited more than 30 books. He has been awarded several prizes and awards, the most important of which are the National Prize of Research (2010) from the Mexican Academy of Sciences; the Prize CCC-2008 from the Mexican Society of Biotechnology and Bioengineering; National Prize AgroBio-2005; and the Mexican Prize in Food Science and Technology. In 2019 he received the Outstanding Research Award by the International Association of Bioprocessing (IBA). Dr. Aguilar is a member of the Mexican Academy of Science, the Central Council of the International Bioprocessing Association, the Mexican Academy of Sciences, the Mexican Society for Biotechnology and Bioengineering, and the Mexican Association for Food Science and Biotechnology. He has developed more than 41 research projects, including 25 international exchange projects. Dr. Cufarfán-López holds a graduate degree in the science in education along with MSc and PhD. He is currently General Secretary of the Coordination of Saltillo Unit of the UAdeC.
